I know I'm not alone when I say that sometimes, I stare at my fridge and pantry thinking, "What in the world am I going to make for dinner??"

This recipe for Creamy Baked Orzo with Chorizo is quite the fusion recipe combining Italian ingredients and mixing it with a Mexican staple, chorizo sausage. Creamy mascarpone cheese with Chihuahua cheese make a delicious gooey combo, and highlighted with sauteed sweet mini peppers and leeks with earthy and a little spicy, chorizo sausage. The little orzo pasta is a fun pasta which looks more like rice kernels!

Ingredients:
  • 1 pound of Orzo Pasta – al dente
  • 1 tablespoon of Olive Oil
  • 8 oz of Chorizo Sausage
  • 1.5 cups of Mini Sweet Peppers – sliced
  • 1 cup of Leeks – cleaned and sliced
  • 1.5 cups of Chihuahua Cheese – shredded
  • 8 ounces of Mascarpone Cheese
  • 2 teaspoons Kosher Salt
  • Fresh Cracked Black Pepper
Instructions:

Heat the oven to 400 degrees.

Heat a skillet to medium-high heat with olive oil. Cook the chorizo sausage, crumbling it and frying until the color deepens to a rich red.

Add the sweet peppers and leeks and saute until tender.

Take a baking dish and add the cooked orzo pasta in. Pour the chorizo, sweet peppers and leeks mixture and toss. Add the both cheeses and mix thoroughly along with salt and some fresh ground pepper.

Top with a little more shredded Chihuahua cheese, if desired.

Bake in the oven at 400 degrees for 30-40 minutes.
