Italian Frittata with Salmon and Peas Recipe

What you'll need:

  • 6 eggs
  • 1 tbsp oil
  • 100g frozen or fresh peas
  • 60g smoked salmon, cut into pieces
  • 2 tbsp milk

Method

First

First, preheat your oven to 200C. Take a large ceramic bowl, crack all of your eggs into it, and whisk with the milk and a pinch of salt and pepper.

Second

Heat some oil in a large, ovenproof frying pan, and add the peas and cook for one minute. Then, gently pour in your egg mixture over the peas, and fry for three minutes on a low heat, or until the base is cooked.

Third

Bake the frittata in your oven for about ten minutes, still in the frying pan. When it is reasonably firm, and the top is bubbling and cooked, remove from the oven and leave to cool.

Fourth

Serve sliced, with a fresh green salad and some fries
